Emergency Food Challenge

Ok, this post is for Lisa who offered this awesome challenge: Trying to live off of our food in the house for 1 week to see how prepared we are.
Well, our family was in town so the last time we went to the store was Monday and we're doing pretty good. We've had leftover stuff a lot and peanut butter and jelly. We've actually been on a pretty tight grocery budget for the last month so it's been fun for me to get creative and do things like make my own bread and cookies and rolls and stuff. One day for lunch we just had homemade bread with butter and jam...I think that's bad when you have like 4 pieces and aren't planning on running anytime soon?!? Oh well. I have a hard time with not going to the store because I am a total sales finder. Like today an ad came for avacado's 6 for $1.00...are you kidding me? That's insane...I seriously might have to break down and go buy some. I'm with all those who love to have fresh fruit/produce every week, it's hard! Also, our fridge wasn't turned up enough so we had like $6.00 worth of milk go bad ;( very very sad. Looks like we'll be making powdered milk again tomorrow..the best kind I've had is Morning Moo's it isn't as stinky and tastes better than the church one. Thanks for the challenge Lisa!

Tanner's Eagle Project

 

Here's a little collage of our weekend up at Camp Kolob. We had so much fun working and playing in the rain, snow, hail, and sunshine AND watching a deer come right into our camp one morning! We discovered that Jeff is an excellent dutch oven cook...we'll have to do more of that at home! Tanner's Eagle Project went really well, they had a lot of people come help. They put in new low-flow toilets to conserve water and also added gravel and grates to all of the water spickets to prevent mudholes in the camps. We love camping and are so glad we got to go for more than an overnighter.

Congratulations Jeff!

Who is this wonderful man I married? I swear I ask myself every single day how I got so lucky to marry him...he is wonderful! This weekend has been graduation week, and it's been fun! Last night he presented his research project with his group and they did AWESOME! They looked and sounded so professional...Jeff's classmates said he sounded like a professor. ;) Today was his department ceremony with all of the PT graduating class. There are 18 graduating "Doctors of Physical Therapy" this year, today they all received their cords and pins and tomorrow he gets to walk through the big long boring line. I'm so proud of Jeff, he works so hard and has studied so much to get here and today he was awarded the Overall Outstanding Achievement Award from the UNLV PT program. Congratulations Jeff! I love you mucho! -L

Waiting

Just a quick adoption update:
We've been waiting to get our password so that we can put our profile on the itsaboutlove.com site. I talked to our guy today and I guess it has to be approved through Salt Lake to put us on their website, so he's just waiting for the password to come. Crazy huh? But just so everyone understands, we are approved and our profile is available to all the Nevada agencies already. On another note, things here are going so well! We have an incredible life right now and are getting to spend SO much time together, which won't be the case in a few more weeks so we are trying to take advantage of it. No fancy vacations, no big plans, just hanging out together...it really is better when we're together. We do wish that more of you would come down here and visit us! We're so excited for family to be coming for graduation and for Jimmy's baptism later this month.
